Nolan was gone this past week so I made Caprese Chicken, with modifications of course. 🙂 I did the majority of my shopping at Trader Joe’s, did you know they have recipes on their web site?
The recipe called for grape tomatoes, but I loved the size of these pearls.
I didn’t even count the basil leaves…
And of course I didn’t have mozzarella, so I just topped with some shredded Parmesan, drizzled some balsamic vinegar on it, and let it simmer until the cheese melted.
The result- too much cheese, not enough balsamic vinegar.
PS The tomatoes will burn your mouth. 😛
