I love Pinterest, but there is still something to be said about flipping through a magazine and clipping out recipes. Thanks to my FIL I receive the Food Network Magazine to do just that. Tonight I pulled out this Baked Egg and Curried Spinach recipe from the October 2015 issue.

This was my first foray into curry sauce and I’m not going to lie, the looks of this scared me.
Then spinach, looking a little bit better.
A few eggs and cream and some time in the oven… I still wasn’t convinced.
But after letting it sit 5 minutes (while the naan warmed up), the eggs were cooked perfectly- IMO. I like a little runny yolk.
Nolan even liked it! We did a pretty good job chowing it down while watching the news coverage of the caucuses in Iowa tonight.
