I love Pinterest, but there is still something to be said about flipping through a magazine and clipping out recipes. Thanks to my FIL I receive the Food Network Magazine to do just that. Tonight I pulled out this Baked Egg and Curried Spinach recipe from the October 2015 issue.

This recipe was so easy I had time to take several photos. First tomatoes…

This was my first foray into curry sauce and I’m not going to lie, the looks of this scared me.

A few eggs and cream and some time in the oven… I still wasn’t convinced. IMG_0966

But after letting it sit 5 minutes (while the naan warmed up), the eggs were cooked perfectly- IMO. I like a little runny yolk. IMG_0969

Nolan even liked it! We did a pretty good job chowing it down while watching the news coverage of the caucuses in Iowa tonight.IMG_0971

  1. Looks delicious! Congrats on he venture & the win! I cooked curry tonight too, but it was a bit of a flop.

    I’m starting to get into the food network w/ Worst Cooks in America. Whenever my in-laws look for recipes, they usually favor that brand, & their food is always fresh & delicious.
