I shared a picture of this spinach, tomatoes, and chicken orzo in my Snapchat Day on Monday. Today I’m following up on the entire recipe and what I’ll do differently next time around.
Ingredients
The UN of ingredients; chicken broth from Target, cheese from Lunds & Byerlys, and chicken from Hy-Vee.
Raw chicken is gross and scary. Raw chicken drumsticks are worse.
What I liked about this chicken orzo recipe is that you don’t have to cook the pasta separately. The chicken broth is used to cook it while it simmers. Cheers to one-pan recipes!
Spinach Overload
Unfortunately my one pan was sort of small. I made a small mess while trying to get the spinach to settle down (wilt).
I eventually tamed the spinach enough to add the tomatoes, put a lid on it, and let it simmer. (Simmering is like child’s play our new range.)
It was still a little liquid-y because I had slightly less orzo than the recipe called for. The chicken was good, but messy and I don’t care for the skin (Sophie loved it). Next time I’d use straight up chicken breasts.

The linked recipe looks so fancy, but also easy, so that’s a win! I’m going to try this one out on kids, so I’ll do chicken breast like you suggested so that I can cut it up. Thanks!
