I like challenging myself with new recipes like Mediterranean Baked Sweet Potatoes, Roasted Cauliflower Soup, and Boston Cream Pie Cake, but sometimes a simple steak salad can do the trick too.
This recipe, if you can even call it that, is SO simple. There are only five ingredients (salad, steak, tomatoes, blue cheese crumbles and dressing) and it takes maybe 10 minutes to prepare this simple steak salad.
I usually use a cast iron pan to cook my steaks, but opted for our griddle this time around, because I wanted to try the wide burner in the middle of our new range. Depending on the steak, cook for 3-5 minutes on each side and then let them sit for 5 minutes.
While the steaks are cooling, you can whisk together the dressing and assemble the salad. I found these AmaBlue Blue Cheese Crumbles at Hyvee and wow! They are the strongest little crumbles I’ve ever met. I highly recommend them and bonus!!! they are from Faribault, MN.
For the lettuce base I used a bag of spring mix, but you could use whatever lettuce you prefer. The dressing (4 servings) is just 1/3 cup olive oil, 2 tablespoons balsamic vinegar and 1 tablespoon honey whisked together. I used my dressing bottle (seen here), to combine them all.
I could even see going sans dressing, especially if your blue cheese crumbles are as good as mine were. Not to be all I-know-you-are-but-what-am-I on your blue cheese crumbles, but seriously, mine were good.
